Greaseproof paper achieves its oil resistance through the paper itself. During manufacturing, the cellulose fibers are highly refined and densely calendered, which closes off the tiny gaps between fibers that oil would otherwise travel through. Wax paper, by contrast, gets its resistance from a coating applied after the base paper is made.
